Introduction

Sebaring taro (alocasia macrorhiza), one of the taro varieties found in Maumere, Flores, has great potential as a source of carbohydrates in the form of starch. This starch can be processed into various food products, including dry noodles. However, natural starch has several deficiencies, such as being insoluble in cold water, taking a long time to mature, and having a low stability. To overcome these limitations, research was conducted to modify the taro starch sebaring with the acetylation method.

The study, led by Herla Rusmarilin and Elisa Julianti, aims to uncover the physical, chemical, and functional characteristics of the sebaring starch which is modified through acetylation, and its effect on the quality of dry noodles. In addition, acetylation starch has a higher swelling power (68.40% vs. 38.44%), which means that starch can absorb more water and produce a softer texture in the noodles. The absorption of water and oil in starch acetylation is almost the same as natural starch.

Application of Acetylation Starch in Dry Noodles

This study also examined the effect of the ratio of starch acetylation and flour, as well as the concentration of sodium tripolyphosphate on the quality of dry noodles. The results show that dry noodles that use acetylation starch with a ratio of 25:75 to wheat flour and 0.4% sodium tripolyphosphate concentration produces optimal quality. This noodle has higher protein content (5.16%), higher fiber, lower total sugar (23.5% and 13.57%), solid loss due to lower cooking (8.33%), and acceptable organoleptic values.

Conclusion

The results of this study indicate that the modification of sebaring taro starch with the acetylation method succeeded in improving the quality of dry noodles. This method can increase the nutritional value, texture, and stability of MI, as well as open opportunities to utilize local food sources and increase the added value of starch-based food products.

The findings of this study suggest that the acetylation method can be used to modify other types of starches to improve their functional properties. Further research is needed to explore the potential of this method in other food applications.
