Introduction

Effect of Distance between Shelves on Water Content

The results showed that the distance between the rack holes had a very significant different effect on the water content of dry turmeric. L3 treatment (7 x 7 cm) produces the highest water content of 10.98%, while the L1 treatment (3 x 3 cm) produces the lowest water content of 7.41%.

Analysis

The distance between wider shelves (L3) allows better air circulation in the dryer. This helps the process of evaporation of water from turmeric faster, thus producing lower water content. Conversely, a narrower distance (L1) causes limited air circulation and the drying process runs slower, so as to produce higher water content.

Effect of Drying Temperature Variations on Water Content

The results also showed a very significant different effect from the variation of drying temperatures on dry turmeric water content. T1 treatment (50 ° C) produces the highest water content of 12.71%, while T3 treatment (70 ° C) produces the lowest water content of 6.89%.

Analysis

Higher drying temperature (T3) accelerates the process of evaporation of water from turmeric, thus producing lower water content. Conversely, lower temperatures (T1) cause the drying process to run slower, so as to produce higher water content.

Based on the results of this study, it can be concluded that the distance between the rack holes and the variation of the drying temperature has a significant effect on the water content of dry turmeric.
