Introduction

Results

The results of this study showed that pH had a significant effect on total dissolved solids (TSS) and glucose levels. The lower the pH, the higher the TSS and glucose levels. This indicates that more acidic pH accelerates the hydrolysis process, resulting in more starch breaking down into sugar.
