The Effect of the Ratio of Taro Flour with White Glutinous Rice Flour and the Addition of Purple Sweet Potato Juice on the Characteristics of Traditional Sticky Rice Cakes
Introduction
Traditional Lapet Glutinous Cake is a beloved dish in many cultures, known for its rich taste and texture. However, the traditional recipe may not be the most nutritious or visually appealing option. In this study, we aim to determine the effect of the ratio of taro flour and white sticky rice flour on the characteristics of the quality of sticky rice. Additionally, we want to examine the effect of the addition of purple sweet potato juice on the color of the cake. Our research will provide valuable insights into the potential of using local ingredients to create healthier and more visually appealing traditional sticky rice cakes.
Methodology
Our study employed a complete random design of two factors, which included a ratio of taro flour and white glutinous rice flour (0: 100, 40:60, 50:50, 60:40, and 100: 0) as well as the addition of purple sweet potatoes (0%, 5%, 10%, 15%) with three repetitions. We analyzed several parameters, including water content, ash content, fat content, protein content, carbohydrate content, fiber content, and organoleptic tests which include aroma, color, taste, texture, and general appearance.
Results
Our results showed that the ratio of taro flour and white glutinous rice flour had a very significant effect on all tested parameters, such as water content, ash content, fat content, protein content, carbohydrate content, fiber content, and organoleptic tastes, color, texture, and general acceptance. The addition of purple sweet potato juice also had a very significant effect on water content, color, and organoleptic parameters in texture and color. The interaction between the ratio of taro flour and white glutinous rice flour with the addition of purple sweet potato juice showed a very significant effect on color parameters and organoleptic tests.
Discussion
The results of this study suggest that the best comparison was found in the taro flour ratio of 40% and white sticky rice flour 60%, with the addition of purple sweet potato juice of 10%. This combination not only provides optimal quality of sticky rice in the nutritional terms, but also enriching the color and taste, making it more attractive and delicious to enjoy. The utilization of taro flour and purple sweet potato juice can not only increase nutritional value, but also provides a deeper visual attraction of traditional dishes that already exist.
Conclusion
This research opens opportunities for further development in making traditional cakes, especially in an effort to introduce local ingredients that are rich in nutrition and provide variations in the taste of Indonesian culinary. Our study highlights the potential of using taro flour and purple sweet potato juice to create healthier and more visually appealing traditional sticky rice cakes. The results of this study can be used as a reference for food manufacturers and researchers to develop new products that are not only delicious but also nutritious.
