Introduction

The parameters tested include emulsion stability, viscosity, color index, pH, total suspended solids, free fatty acids, antioxidants, and organoleptic characters assessed from color, aroma, taste, viscosity, and general acceptance.

Results

The results of this study show that the ratio of VCO with tamarind juice has a very significant effect (p <0.01) on the stability of the emulsion, viscosity, total suspended solids, pH, free fatty acids, antioxidant levels, and hedonic values of color, aroma, taste, viscosity, and general acceptance. However, the color index parameter does not show a significant effect (P> 0.05). On the other hand, the concentration of xanthan gum also shows a very significant effect (p <0.01) on the stability of emulsion, viscosity, total suspended solids, pH, free fatty acids, and hedonic values of color, viscosity, and general acceptance. However, this concentration does not have a significant effect (P> 0.05) on the color index, antioxidant levels, and the hedonic value of the aroma and taste.

Discussion

The results of this study indicate that the ratio of VCO with tamarind juice and the concentration of xanthan gum are important factors in determining the physical and sensory characteristics of emulsion drinks. The best combination found in this study was J1K3 treatment, which was 10% VCO, 90% of tamarind juice, and 0.21% xanthan gum. This combination produces emulsion drinks with optimal physical and sensory characteristics, making it strongly recommended for the development of healthy beverage products.
