However, with the rising cost of beef, some unscrupulous traders have resorted to mixing pork into their meatballs, deceiving consumers and violating their trust. This practice not only compromises the quality of the food but also disregards the dietary restrictions of those who follow a taboo against pork. Therefore, this study aims to identify the presence of pork fat in meatballs circulating in the city of Medan using UV spectrophotometry and chemometric methods.

Research Methods: A Combination of Soxhletation Extraction and UV Spectrophotometry

This study employs the soxhletation extraction process using N-Hexane solvents to obtain fat from the tested meatball sample. The analysis is then carried out using a UV spectrophotometer with linear data processing techniques, including Discriminant Analysis (LDA) and Principal Component Analysis (PCA). By combining these methods, it is hoped that the composition of fat can be identified more clearly and precisely.

Research Results: A Comparison of Fat Content in Meatballs

Extraction results show that fat from pork, beef, and chicken reaches 14.24%, 12.25%, and 7%, respectively. In contrast, fat in meatball products processed from pork, beef, and chicken is 3.33%, 2.97%, and 2.43%, respectively. Additionally, the analysis of three random meatball samples showed fat content of 3.33%, 2.89%, and 1.25%. The measurement of wavelengths produced by each UV spectrophotometer for pork, cows, and chicken fats is 268 Nm, 237 Nm, and 234 Nm, respectively. For processed meatballs, the result is 268 Nm, 237 Nm, and 231 Nm. For random meatball samples A, B, and C, the wavelength is 233 Nm, 234 Nm, and 236 Nm.

From the results of the analysis using the LDA method, it was found that fats in processed meatball products could be well grouped. The PCA method also shows the ability to classify chicken, cattle, and pigs properly into the appropriate quadrant. This finding demonstrates that UV spectrophotometry, combined with chemometric techniques, is an effective tool to identify and distinguish the types of fat in food products, especially meatballs.
